Quick Appetizer For Super Bowl Sunday: A Shrimp Mousse

This is really easy, different and impressive!

Looking for an easy appetizer for Super Bowl Sunday that you can make ahead of time? This recipe for shrimp mousse fits the bill. It may sound fancy, but it is easy to make.

Shrimp Mousse

serves about 10

1 envelope Knox plain gelatin

¼ cup water

1 can cream of shrimp or cream of tomato soup, undiluted

1 -  4 oz. pkg. cream cheese

¼ cup finely chopped onion

¼ cup finely chopped celery

1 carrot, shredded

½ cup mayonnaise

1 can (3.5 oz.) tiny shrimp, drained

Chopped fresh herbs such as chives and parsley, for color, or a few shakes of dried herbs.

Mix gelatin and cold water in a cup and set aside.  In a saucepan, heat soup and cream cheese on low until melted – stirring frequently.  When cheese is melted and mixture is smooth, take off heat and stir in onion, celery and carrot. Let cool. 

When the soup mixture is cool, add the remaining ingredients including the gelatin and stir well.

Pour into any lightly greased (spray with Pam) ring mold, loaf pan, or decorative dish and chill until firm – several hours or overnight.  You can remove the mousse from the metal molds or you can serve it directly from a serving dish.  

Serve with crackers.
