Mexican Fare to Join the Bishops Corner Restaurant Scene

Qdoba plans a fall opening in the Edens-owned Bishops Corner shopping center in West Hartford.

Another dining alternative will soon available in Bishops Corner, with the announcement that Qdoba Mexican Grill plans to open this fall in the Bishops Corner shopping center which is already home to Noodles & Company and Sakura. That same shopping center will also soon include Blue Plate Kitchen, which will will serve “modern comfort food” and several weeks ago announced a fall opening.

An Edens representative told residents last week that Qdoba plans a fall opening next to Blue Plate Kitchen, said Bob Fressola of the Bishops Corner Neighborhood Association and letters have been sent to neighbors in the area advising them of upcoming changes to the shopping center.

According to its website, Qdoba serves “food for people who love food.” The casual restaurant has a focus on preparation and fresh ingredients, and the website states, “Put simply, our ingredients get our undivided attention and effort.” Qdoba serves breakfast as well as lunch and dinner.

The West Hartford location will be the company’s first in Connecticut, and along with other planned locations in the state will be corporate-owned rather than franchises.

Andrew Eck, Qdoba’s regional marketing manager for New York and Connecticut, said in an email, “We could not be more excited.”

“We are completely new to the state of Connecticut and certainly have some work ahead of us to explain our food and brand to Connecticut residents, but we are definitely looking forward to it!” Eck wrote.
